AI can estimate probabilities better than a casual observer, and in some cases slightly better than a simple statistical model. What it cannot do is predict a result. Football has a high noise-to-signal ratio - a deflection, a red card or a refereeing decision routinely overturns the better side - and no model removes that.
In practice, most working systems are less exotic than the marketing suggests. A well-specified Poisson or bivariate-Poisson model with good inputs is competitive with far more complex machine learning approaches, because the limiting factor is data quality, not model capacity.
Where models genuinely add value is calibration: producing probabilities that are right on average over many matches, so that events given a 30% chance happen roughly 30% of the time. That is measurable, and it is what a serious service should be judged on.
The claim to distrust is any system advertised on accuracy percentages without odds, sample size, or a published record. Ask instead: over how many settled picks, at what average odds, and can I download the rows and check them?
